Our oyster leases are located in the pristine waters of Oyster Bay near Panacea, FL. Our offices are in Panacea, FL. Wakulla's coastline is 85% undeveloped and owned by local, state and federal government entities. This ensures a clean, nutritious, safe environment that enables us to grow a rich, creamy, firm textured oyster that is free from hazards experienced by the more populated coastal areas.
Saucey Lady Oyster Company was founded in 2014 by Tim Jordan and Walt Dickson. Tim and Walt are charter members of an oyster growing program initiated by The TCC Wakulla Environmental Institute (WEI) to promote aquaculture and create jobs in the economically challenged coastal communities of Wakulla County, FL.
They are routinely culled and raised out of the water to ensure that they become clean, plump, well rounded, meaty, salty, gourmet quality oysters when harvested. Upon harvest, they are graded for size and quality to assure our customer's satisfaction. Only our best oysters are brought to market. We are very proud of our oysters and hope you will enjoy them! Our famers grow a hybrid variety of oyster called a triploid. Triploids grow much fatter than wild oysters. Triploid oysters are sterile and do not spawn in the warmer months. Therefore they can be enjoyed throughout the year, even in months that do not contain an "R". These oysters were developed to remain fat and firm all year when wild oysters tend to spawn out and become weak and milky. This revolutionary development in the oyster industry allows you to enjoy our oysters whenever you crave them, year round!
Traditionally, farm raised oysters were raised on the bottom of the Bay. Producers are now allowed to use the water column in specific restricted areas. This contributes to growing a healthy, clean product and protects the oysters from predators. Our oysters are graded on and tumbled on a regular basis to ensure that they achieve the desired shape and conformation of the shell. This process also helps develop a deeper cup, resulting in an increase in meat content. On harvest day our oysters are removed from the water and delivered to our processing house to be placed in the cooler within an hour, making our oysters fresh and safe to consume!
SAUCEY LADY OYSTER COMPANY is affiliated with PANACEA AREA OYSTER COMPANY. PANACEA AREA OYSTER COMPANY processes and sells oysters for a select number of hand-picked farmers in the Big Bend area of Florida’s Gulf Coast. We offer a variety of oysters from the best growers in the region. Each farmer utilizes different techniques and methods of growing farm raised Triploid oysters. We also market a number of oyster related products. Our oysters are harvested daily and shipped overnight in Styrofoam coolers to ensure that our product is fresh, safe, and of the highest quality.
